ABSTRACT
Since the beginning of the 19th century, the global rate of sugar consumption has been observed to increase dramatically [in 2014, Americans consumed 100 pounds (45 kg) of sugar per person over a year]. The resulting supply of excessive calories has significant health consequences. Since the synthesis of saccharin, the first sweetener, in 1879, people have been continuously looking for an ideal sugar substitute which could help reduce the calorie content of the diet without losing any qualities typical of sucrose flavor. This is of particular relevance at this time when type 2 diabetes and obesity have reached epidemic status.
Our article presents tips on choosing the right sweetener, including new sweeteners, which have been launched on the Polish market in recent years.
